The following list is a sampling of what Chef Ricky Joe's  Personal Chef Service can prepare for you. The suggestions in this list are customized to your specific taste and health needs. If you have any favorites that aren't on this list just let us know and we'll be glad to prepare them for you. We have a network of chefs who we share a library of thousands of recipes that aren't listed on the website so please don't be shy about asking us about other recipes.

Ground Beef - (all ground beef recipes  can be substituted with ground chicken or turkey)

 

MEATLOAF- 4 varieties

·TRADITIONAL STYLE-pure American fare, w/creamy country gravy

·MARINARA w/basil and sundried tomato & Pinenuts

·OLD FASHIONED w/ bacon and Swiss cheese

·”CAJUN”- MILD, MED, OR CRANKED UP

Truly delicious at any spice level!

 

Tamale Pie- Tex-Mex favorite. Cornbread layer, well seasoned ground beef, topped w/ cheddar & jack cheese

 

Pennsylvania Dutch Pork & Sauerkraut - A family recipe-hearty, flavorful & lean!

 

Mama’s Pot Roast - Slow cooked chuck roast, in mushrooms and gravy, served with Scalloped Potatoes and Country Style Green Beans

 

Chef Ricky Joe’s Sheppard's Pie - Lean ground beef, mushrooms, tomatoes, peas, & thick beef sauce  simmering under a layer of creamy mashed potatoes.

 

Enchiladas  - slightly spicy, with a Mexican Blend of cheeses and a delicious sauce.

 

Savory Stuffed Bell Peppers - A mixture of seasoned lean ground beef, onions, garlic and a tomato sauce are combined with rice and “stuffed” in the peppers.

 

Emerald's Salisbury Steak - Seasoned Beef Patties pan fried and served with a yummy gravy and garlic mashed potatoes.

 

Chili: - Can be left cooking in your crock pot ready to eat that night or we can freeze the chili in a freezer bag and freeze it until you’d like to have it. Served with cornbread and honey or jalapeño butter

 

Round Cuts & Pot Roasts: - We’ll be glad to fix these in your crock pot to have the day of our cooking or we can freeze the item in a freezer bag for you to reheat later in the week.

 

Traditional Pot Roast - Seasoned & Seared in a little oil , with all the fixin’s, Onions, Celery and Carrots. Served over noodles.

 

Italian Style Pot Roast - A  seasoned chuck roast, seared & left to simmer with Italian imported diced tomatoes, rosemary, garlic, & fresh basil. Served with Italian bread.

 

Mediterranean Pot Roast - With olives, sun-dried tomatoes, balsamic vinegar & Italian herbs

 

Bloody Mary Pot Roast - Chuck roast, carrots, onions, and celery simmered in red wine, stock, and a spicy tomato sauce. Served over rice or noodles.

 

Swiss Steak  - Tenderized Top Round is dredged in seasoned flour with mustard and then browned and simmered with savory vegetables.

 

Chef Doug’s Beef Stroganoff - Stew meat sautéed with mushrooms, onion and garlic then simmered in consommé and sherry and served over egg noodles.

 

Hungarian Goulash - In a sweet, creamy  Hungarian paprika sauce, full flavored and rich.

 

Sirloin Beef Burgundy (Boeuf  Bourguignon) - Lean top sirloin cut in cubes is simmered in a rich red burgundy sauce. Served with French bread.

 

Steaks: These can be cooked and refrigerated to reheat, but the best result is to grill them yourself, they’ll be ready to grill on the barbecue , in a grill pan, or in the oven.

 

Beef Medallions in Brandy Sauce - A Client favorite!

 

Bacon-Wrapped Fillets - Beef tenderloin fillets, surrounded with bacon slices and broiled; served with wine/butter sauce;Side is Parmesan Mashed Potatoes

 

Blue Cheese Crusted New York Steaks - Pan Seared and ready to finish in the broiler with a Cabernet Sauce to heat & serve with the steaks.

 

Grecian Skillet Rib eyes - Basil, oregano, lemon, feta, olives

 

Steak And Vegetable Kabobs - Cubes of beef, bell peppers, onions, and mushrooms, marinated in a secret blend of olive oil and spices. (Grill ready or Cooked. Served with rice.
