following list is a sampling of what Chef Ricky Joe's
Personal Chef Service can prepare for you. The suggestions in
this list are customized to your specific taste and health
needs. If you have any favorites that aren't on this list just
let us know and we'll be glad to prepare them for you. We have a
network of chefs who we share a library of thousands of recipes
that aren't listed on the website so please don't be shy about
asking us about other recipes.
Pork
Tenderloin - Mushroom
Stuffed Tenderloin - Pork tenderloin is split and stuffed
with a stuffing of
fresh mushrooms, bread crumbs garlic and bacon. A delicate
gravy accompanies
this!
Balsamic
Roasted Pork Tenderloin - Fresh Thyme &
Rosemary and a good quality Olive Oil Balsamic
rubbed into the meat, then roasted
Stuffed Pork
Chops - Thick Center
Cut Pork Chops with a cubed bread stuffing with onions, apples
and a hint of cinnamon.
Stuffed Chops
w/Spinach, - Fontina & Pine nuts Oven baked,
delicious over risotto or orzo.
Braised Pork
Chops - with Caramelized Onions & Smoked Gouda Oven braised
until tender, then sprinkled with grated smoked gouda cheese.
Jamaican Jerk
Pork Tenderloin with Pineapple Mango Chutney
Shredded Pork
Chimichangas - Tasty pork
mixed with Ancho chilies and garlic
Herbed
Italian Pork Stew - Loaded with
fresh Italian Herbs, delicious with pasta or rice.
Praline Ham - Thick ham
slices are glazed in a blend of maple, butter, and sugar then lightly
sprinkled with toasted pecans.
Ham Strata - Chunks of
ham, fresh bread cubes, cheddar cheese and sautéed onions in a creamy
white sauce, oven baked and irresistible! Veggies added as
desired!
Holiday
Brandy-glazed Ham - Brushed with
Dijon, brandy and brown sugar glaze before baking gives the ham
a delicious sweet and tangy taste.

WAYS - pork chop
entrees are prepared using thick, center cut, loin chops,
trimmed of all visible fat. To insure chops are tender & remain
juicy during freezing & heating, I use a special brining method.

Tenderloin with Balsamic Rhubarb Compote
Stuffed Pork
Loin Chops with Pumpkin Bread Stuffing - Thick and
delicious boneless chops are stuffed with a homemade pumpkin
bread stuffing and baked until tender and juicy.
Pork
Tenderloin with Honeyed Butter - Tenderloin is
browned in a butter and honey sauce before roasting giving the
meat a hint of sweetness while sealing in the juices.
Pork
Tenderloin with Jalapeño Paste - Garlic,
jalapeno chile, thyme, and cumin combine to make a spicy rub for
the baked tenderloin.
LAMB
Pastitsio - Greek special
casserole with lamb, pasta. A comforting, hearty, chilly weather
dish that’s very popular
Moroccan Lamb
- TAGINE w/ dates & almonds Rich, slow
cooked, & excitingly flavorful
Gyros with
Lamb - Lightly
seasoned lamb are grilled and served in pita bread with the
traditional Greek dressing Tzatziki (yogurt/cucumber/mint
sauce), and sliced tomatoes.
Irish Stew - The Irish
classic stew of lamb, leeks, and carrots, simmered in beef
stock, with fresh herbs.
Lamb Chops - Marinated in
olive oil, balsamic vinegar, garlic, and rosemary then grilled
to your liking. These can also be left for you to grill when you
come home.
Stuffed
Peppers - Red peppers
stuffed with a mixture of ground lamb, fresh garlic, peppers,
red onions and a hint of crushed red pepper, baked in a rich
tomato sauce.
Lamb Stew - Tender chunks
of lamb combined with a variety of vegetables, tomatoes and
seasonings.
