The following list is a small sampling of what Ricky Joe’s Personal Chef Service can prepare for you. The suggestions in this list are customized to your specific taste and needs. Your requests for favorites that are not on this list are welcome.

 

Chicken or Turkey Pot Pie - This is one tried but true mainstay. It is full of carrots, peas, and of course chicken or turkey all under either mash potatoes or a tender pastry crust. Your choice. What a great way to end a hectic day!

 

Raspberry Balsamic Glazed Chicken - Boneless chicken breasts slow simmered in a raspberry balsamic vinegar base – wonderful.

 

Chicken with Brie, Apricots and Almonds - What a great dish for something a little different. This can also be wrapped in a puff pastry for an elegant presentation.

 

Francese with Lemon and Pecorino -n Tender chicken medallions sautéed with pecorino crust and drizzled with a light lemon sauce.

 

Chicken Enchiladas - Tender chicken shredded and cooked in rich green chili sauce and rolled in corn tortillas and baked with shredded cheeses on top.

 

Crispy Baked Chicken - Chicken pieces coated with potato flakes and Parmesan cheese and other spices and baked till tender; served with Baked Potato; and sautéed Italian veggies

 

Chicken Alfredo - Tender Chicken baked in a rich creamy Alfredo sauce and linguini noodles and broccoli.

   

Mexican Chicken Done Kiev Style - Stuffed w/ mild chili & jack cheese, topped w/ relleno sauce

 

Turkey Tamale Pie - Tex-Mex favorite. Cornbread layer, well seasoned ground turkey or chicken, topped w/ cheddar & jack cheese

 

Chicken Chasseur - Boneless breasts are slow simmered in a rich sauce of brandy, red wine, herbs, tomatoes and mushrooms.

 

Company Chicken and Wild Rice Bake - Hubbard squash, nutty wild rice, dried mushrooms and tons of savory herbs make this dish one your family will ask for!

 

Arroz con Pollo - Seasoned chicken, tomatoes, red peppers, and peas with rice.

  

Chicken and Vegetable Curry - Garlic, ginger, soy sauce, curry and red onions combine chicken and vegetables served w/ rice.

 

Mediterranean Chicken - Fresh herbs, red peppers, fennel white wine and olives surround these chicken pieces.

 

Almond-Apricot Chicken with Mint Pesto - Chicken breasts are stuffed with a goat cheese-apricot-almond mixture, topped with almonds and breadcrumbs, baked and served with mint pesto.

  

Coconut Curry Chicken - Sweet coconut milk blended into a creamy peanut curry sauce.

 

Chicken Marengo - This dish was created for Napoleon after the battle of Marengo in 1800. Chicken is browned and then cooked slowly with diced tomatoes, crushed garlic, crushed red pepper, parsley, white wine and brandy.

 

Chicken Cordon Bleu with Creamy Wine Sauce - Boneless chicken breasts stuffed with ham and Swiss cheese, oven baked and topped with a creamy wine sauce. a signature dish.

 

Afghan-Style Roasted Chicken - This Afghanistani marinade uses yogurt, lemon juice, paprika, cumin, onion, and garlic. You'll think that you're dining in a great ethnic restaurant.

 

Acorn Squash Stuffed with Sausage and Pears - Roasted acorn squash halves stuffed with a savory stuffing of ricotta cheese, mild chicken or turkey sausage, and diced pears. Delicious!

 

Chicken and Stir-Fried Vegetables with Zesty Asian Sauce - Chunks of chicken with zucchini and red bell pepper stir-fried with a zesty sauce.

 

Greek Garlic Chicken - Braised with lemon, garlic & oregano

 

Stuffed Peppers with Turkey Sausage - A lighter twist on traditional stuffed peppers features a filling of couscous and turkey sausage and shredded Jack cheese.

 

Chicken Picatta - Tender cutlets are sautéed and served with a piquant sauce of lemon juice, garlic, vermouth and capers.

 

Roasted turkey breast with Stuffing - The flavors of the Holidays anytime. Turkey breast is roasted with homemade stuffing and served with pan gravy and mashed potatoes.

Chicken Marsala - Boneless chicken breasts and sliced mushrooms simmered in a creamy Marsala wine sauce.
